Crab Apple Relish

Well Newfoundland is not known for its apple production and never will be. However, we do have some beautiful crab apple trees. The fruit from some of those trees is so bitter that it will take your breath away if you take a bite.








I’m lucky that the tree in my garden gives not only beauty in the spring, but also yields tasty yellow apples that are small but great for cooking.

I made unsweetened applesauce, apple pie filling and apple salsa a couple of weeks ago before I started my blog, so unfortunately I have no pictures. It’s easy to get applesauce and pie filling recipes online, but the apple salsa is my own recipe and it is DELICIOUS, so I’ll share it at the bottom of the post.

But for now...the Relish.

This is my Aunt Roz’s recipe, and I think she got it from her friend Jean who got it from...that’s the way of Newfoundland Recipes!


First you peel and slice 4 cups of onion. Make sure your pieces are bite sized. You put the onion in a pot with  2 cups of sugar and 2 cups of vinegar and 1 teaspoon of each of salt, cinnamon, allspice, cloves, and pepper. Put the pot on medium heat, stir, and simmer.



While the onion mix is simmering, wash the crab apples. Working with one apple at a time, cut away any blemishes or bruises.  Core and slice the apples. There is no need to peel. As you slice each apple, add it to the pot and stir in so that the apple won’t discolour. Continue until all apples have been added to the pot. The first apples should now be cooked down. This will thicken your Relish.






 Continue to cook for about another ten minutes so that all the apple is soft but some slices are still visible. Taste and add additional sugar if desired.



















Bottle according to your preferred method. Makes around 11 cups. The full recipe is at the very bottom of this post.












And as promised the Apple Salsa! This is not spicy, but feel free to add a jalapeno or two if you want some heat! Cheers!

Apple Salsa
A delicious salsa that blows ordinary salsa away!
Ingredients
  • 18 - 24 Crab Apples
  • 8 medium to large Tomatoes
  • 6 Onions (white)
  • 1 cup Brown sugar
  • 1/2 cup Vinegar (white)
  • 1 teaspoon Salt
  • 1/2 teaspoon Cinnamon
Instructions
1. Peel and slice onions.2. Cut up tomatoes, removing as much of the seed as possible (but don't stress if some remains!)3. Place all ingredients except apple in a pot over medium heat and simmer.4. Wash apples. Cut away any blemishes or bruises. There is no need to peel. Working with one apple at a time, core and slice. Add to the pot immediately so as to prevent discoloration.5. Bring to a boil for an additional 10-15 minutes. Remove from heat.6. Using an immersion hand blender, blend until thick but still chunky. 7. Bottle according to your preferred method.

Crab Apple Relish
A savory blend of apple and onion that can be served over meats or vegetables
Ingredients
  • 60 Crab Apples
  • 4 cups Whte onion
  • 2 cups White sugar
  • 2 cups White vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1 teaspoon Allspice
  • 1 teaspoon Cloves
  • 1 teaspoon Pepper
Instructions
1. Peel and slice the onion into bite size pieces. Place into a large pot over medium heat with all other ingredients except apple. Simmer.2. Wash crab apples. Working with one apple at a time, cut away any blemishes or bruises, core and slice. There is no need to peel. Place apple slices into pot with onions immediately and stir so as to prevent discoloration. Continue until all apples are added. The first apples added will have cooked down, but that helps thicken the relish.3. Cook for another ten minutes so that the last apple added is soft but not cooked down.Bottle according to your preferred method.
