Barbequed Balsamic Mushroom Skewers
It's cloudy and cool here today. Where is the heat wave that they are getting on the mainland? While I don't particularly want it to be 45 C here, 25 C would be nice!
Regardless of the weather, we are barbequing. One of our favourite side dishes for a barbeque is Balsamic Mushroom Skewers.
You are going to want one of the big packages of mushrooms from Costco.
You also need skewers (2 per person). I have the metal ones, but I find that they are hard to deal with on the barbeque because they get too hot, so I use the wooden ones on the barbeque. These need to be soaked in water for an hour or so.
Mix 6 cloves of minced garlic, 6 tablespoons of balsamic vinegar, 3 tablespoons of soya sauce, and 1 teaspoon of dried thyme in a small bowl.
I know you aren't 'supposed' to wash fresh mushrooms, but given Karl's immune system I err on the side of caution and I wash them. You can peel or wash or do what you want with them! Then cut the mushrooms in half and put them in a large ziplock bag. Pour the balsamic vinegar mixture in the bag. Make sure the bag is zipped, and then shake to mix thoroughly. Let the mushrooms marinate for at least half an hour. I always leave them on the counter during the marinade process.
When you are ready to barbeque, thread your mushrooms on the skewers. I lay them on a parchment paper lined baking sheet to transport them out to the barbeque, and then use the same pan to bring them to the table.
Grill on the barbeque for about 3 minutes then carefully turn and grill for 3 minutes more. You are going to love them!!
Note: You can probably bake these in the oven on a rack held over a baking pan, but I've never done them like this so I can't guarantee they will be as good.

12 wooden skewers (or metal skewers if you are careful!)
1 large pack of mushrooms (680 g)
Marinade mix:
3 cloves minced garlic
6 tablespoons balsamic vinegar
3 tablespoons soya sauce

If you are using wooden skewers, soak them in water for an hour.
Mix the marinade ingredients in a bowl or mixing cup.
Prepare your mushrooms (wash or peel). Cut them in half and put them in the ziplock bag. Pour the marinade ingredients in the bag. Carefully seal and shake. Let the mushrooms marinade for at least 30 minutes.
When you are ready to grill, thread your mushrooms on the skewers. Grill on the barbeque for about 3 minutes then carefully turn and grill for 3 minutes more. Serve and eat!
