Copycat Mary Brown's Chicken Wings in the Actifryer
It has been months since I have posted. Life happens! Other than my granddaughter growing so quickly, not a lot else is new on the people front. On the personal front, Karl gifted me with a longarm sewing machine a couple of weeks ago. It's for my birthday and Christmas and next year's birthday and Christmas and...lol. It's all put together but I haven't started her up yet! A little daunting! (Why is a sewing machine a female?) I'll post a picture of my first completed project when I take the plunge and thread the needle!
While the calendar says summer, the temperature doesn't. We've had a few nice 'seasonal' days, but today isn't one of them. I thought I'd make comfort cold weather food for supper, which in this case is copycat Mary Brown's chicken wings in the Actifryer. Then I thought I'd take some pictures and do a blog post. So, here goes...lol
I can't take credit for the Mary Brown's mix. That goes to Barry Parsons from Rock Recipes. It's awesome. Go check it out here: https://www.rockrecipes.com/copycat-big-mary-chicken-sandwich-taters/
I make up a batch of the breading mix and store it in a plastic bag in my cupboard. When I want to use it I pour some in another bag, add chicken and shake. You know the drill!
Then I place the chicken pieces in the Actifryer with the paddle removed. You don't need to add any oil. I tried a double layer of wings once, and while the chicken cooked, but it didn't get as crispy. So best advice, if you need more than 15-16 pieces, do a second batch. If you are starved you can eat the first batch while the others are cooking! If you can wait, put them on a parchment lined cookie sheet and place in the oven on the lowest oven temperature your oven has.

After 20 minutes I turn them over
16 more minutes and they are done
If you have an Actifryer basket (available at Canadian Tire or Amazon), treat yourself and add a basket of frozen onion rings on top of the chicken for the last 16 minutes
Yum!
If you want to do bigger pieces of chicken, I'd suggest still turning at 20 minutes, then checking again after another 20 minutes and deciding after that how much more time is needed. Enjoy!
Check your manual for instructions on how to oil the machine correctly. machine oil
